One of my favorite snacks (and sometimes breakfasts) is having shredded carrots over hummus. It’s super delicious, simple, and nutritious.
I realize that typically people just dip regular-sized carrots into hummus, but I feel like you tend to eat more dip and less carrots that way, which just won’t do.
To prepare this snack:
1. Add 2 heaping spoonfuls of hummus onto a plate
2. Grab a generous handful of shredded carrots and place on top.
3. Toss the carrots and hummus with your spoon to spread evenly. It’s similar to preparing a salad — when you toss a salad properly, you tend to use less dressing. Well, the same goes for this snack. After tossing, you might find, as I often do, that you need to add more carrots to your plate to have a better balance and a higher carrot to hummus ratio, which means MORE NUTRITION.
What you’ll get out of eating hummus and carrots:
- Fiber
- Protein
- Vitamins A, K, and E
- Potassium
- Folate
- Manganese
- Phosphorous
- Magnesium
- Zinc
- Copper
